Autumn leaves are falling, a chill in the moonlight evening and what better way to warm your insides than with this creamy cauliflower soup. The warming sensation of blended spices in the curry powder linger with every spoonful of this delicious creamy soup.
So how does one get a full flavoured and bodied soup? One that’s going to warm the soul and not take the whole day to boil and bubble and simmer on the stove for six hours. Starting from a good base, sautéing vegetables and spices and gradually layering flavours.
And let’s not forget the all important secret of any hearty soup or stew, the Rue.

So here’s your starting point. The Rue or Roux (pronounced roo) is a thickening agent for soups and stews. Which in simple terms means it’s made by cooking flour and a variety of oils and animal fats until the raw flavour of the flour cooks out and the rue has achieved the desired colour. White to a creamy mellow yellow. It’s texture is silky-smooth. This method is a base for creamy macaroni and cheese, any vegetable soup or rich meaty stews.
And in this case my sisters original recipe for cauliflower soup. Not wanting to leave the left over cauliflower in the fridge costing around $4.00 Aus. A bit rich! A hearty soup was made!
Recipe: Creamy Cauliflower and Curry Soup
2/3 cup all purpose flour
2 tablespoons butter
1 tablespoon curry powder
1 litre hot water
In a saucepan melt the butter over a medium heat, add the flour to butter and whisk until it’s fully cooked, you’ll know when it’s cooked when there’s a change in colour. Sprinkle in the curry powder, lightly whisk. Gradually add the boiling water.
1/2 head of cauliflower, roughly chopped
2 potatoes, roughly chopped
1 parsip, roughly chopped
1 onion, roughly chopped
2 vegetable stock cubes
Add enough boiling water to cover all the vegetables that you’ve just added.
Bring to boil, then simmer for 20 minutes. Puree all ingredients for about 3 minutes. Season to taste, use white pepper.
So warm up those Autumn nights with this creamy cauliflower and curry soup.
