With friends visiting from Australia, this week has been a buzz, I’ve changed hats so many times this week. I’ve enjoyed their visit immensely and I’m sorry the week has flown so fast…wanting to make something sweet for an afternoon coffee, one of my never fail quick apple cakes is this one. I can’t tell you where the original recipe has come from…it’s one of those family ones where I think everyone has a copy! Believe me you can rely on this one, it’s a sure thing!
With only 1 piece left and the crumbs for a final spoon pick up, this apple cake is soft, moist and a winner.
Recipe: Apple Cake
125 grams butter
1 cup castor sugar
2 eggs
1 cup self raising flour
1 cup cornflour
1 1/2 cups of well drained cooked apples
icing sugar
Preparation:
Cream butter and sugar until light and fluffy, add eggs one at a time beating well after each addition. Fold in sifted flours.
Spoon half the mixture into a round 25cm cake tin, and spread evenly over the base. Add hot apple, spoon remaining cake mixture over the apple. As the top cake mixture melts, spread it evenly over and through the apples. Don’t worry if you don’t cover all of it.
Bake in a moderate oven for 35 – 40 minutes or until cooked when tested. When cool sprinkle with icing sugar and serve with cream, custard or vanilla ice-cream.

Oh, no worries! I mean, I don’t write my recipes with temps in Celsius, or amounts in grams, so I’m not sure why you need to cater to me, either. 🙂
