Handwritten Recipes
This recipe was handwritten and sent to me from one of my dear special friends.We’ve known each
other from college boarding school days and have kept in touch since then.
I have to admit I was a fish out of water with this recipe as I’d never before made a self saucing
pudding…what’s the right dish to use? what should the sauce look like before pouring on top of
the pudding mixture?…
…but trusting my friend, knowing she had made the effort to write down this recipe and send it
over the seas… I continue on her directions…
…continuing every five minutes checking the oven, I was thrilled at the result.This is absolutely
mouthwatering and I’ll admit it I went back for seconds.Read on for the recipe…
Recipe: Butterscotch Pudding (self saucing)
1 cup self raising flour
3/4 cup sugar
pinch of salt
60oz butter
1/2 cup milk
Sift flour, add salt and sugar into a mixing bowl. Melt butter and add to flour mixture with milk.Combine thoroughly.Place into a greased ovenproof dish.Dish size for these quantities is about 25 x 17cm. Cake mixture should be about 2cm thick .
Sauce:
2 tablespoons golden syrup
1 1/2 cups hot water
30g butter
Combine all ingredients in a saucepan. Stir over low heat until butter melts
Bake in moderate oven for 30/40 minutes.
A perfect after dinner sweet…and the best thing self saucing… a delicate butterscotch flavour, a
real winner.
Taking advantage of the afternoon sunlight, these photo’s were taken in my garden. As my
gardens flowers are finishing for another season change, on Saturdays visit to the market, there
was no resisting buying fresh flowers for the house…these roses were given to me by Piero who’s
flower stall I buy often regularly from. Aren’t they just beautiful, their colour and I love their full
open bloom.
Another purchase was this antique birdcage, couldn’t resist!
