What to make for the first day of school, lunch box treats?
The shiny new lunch box is filled with fruit,crackers,cheese,sandwiches(healthy) and of course that energy boosting sugar plus delight.
Here’s the favourite of my niece and nephews taste buds….
Chocolate Chip Cookies.

It’s a favourite with the kids and the irresistible fudgy chocolaty taste will win you over.
This recipe has been adapted from the Neiman Marcus recipe…had to look that one up! You can read about the recipe here…urban legend…status – false. What ever the recipe it’s going round.
My sister has also tweaked it for her kids liking. I have to admit I love cooking with my sister we seem to know what the other is thinking and as our minds mix we create some wonderful things…it’s been too long since we’ve been together.
Recipe:
Serving: 12 cookies
Oven Temp: 375°F / 190
1/2 cup softened butter
1 cup brown sugar
3 tablespoons granulated sugar
1 large egg
2 teaspoons vanilla extract
1 3/4 cup flour
1/2 teaspoon baking soda
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons cocoa powder
1 cup chocolate bits
Cream the butter with the sugars until fluffy.Beat in the egg..
Add the vanilla extract…
Combine the flour,baking powder, baking soda, salt and cocoa. Then beat into the butter mixture.
Stir in the chocolate chips. Roll desert spoonfuls in you hand, gently forming a ball and place on a oven tray covered with oven proof paper.Gently press down. Cover the top with extra chocolate bits.
Cook in pre heated oven for 8 minutes…yes, only eight minutes…
These chocolate chip cookies are the best and easy as child’s play. Ready in minutes for the school day lunch boxes or a relax with a good magazine and coffee.
You deserve a coffee break and a chocolate chip cookie!
