Soup Kitchen: Corn & Chicken

Here’s one of those quick light lunches, for you. One that is going to warm you up. Cuddle you… and we all need cuddling! A very tasty Corn & Chicken Soup. Not a soup that I’ve made before, but was teased to try the flavours. I’ve always seen  it on menu’s but have never tried it. It’s funny how the cooler days, we reach for boiling water, stock cubes and vegetables to satisfy our taste buds. Read on for the recipe…

Baked Banana Cheesecake

How wonderful to share with you my friends, what a lovely day it’s been today. A few rays of Autumn sunshine, although the air is crisp and cool, a little home-style baking,  time to write and hear back from a friend via e-mail and an afternoon ‘happy moment’ with my sister with  coffee and a slice of this baked banana cheesecake. ‘Happy Moment’ a small indulgence while on the Slimmer Mediterranean Diet This baked banana cheesecake, sort of just came together while out shopping, I had decided not to through away those forgotten bananas before not attempting to bake something with them. In my mind, was my favourite banana bread recipe, but while out I picked up one (I have too many!!) of my monthly cooking magazines. And wow! just what I needed a seasonal special on baking with banana’s. Chocolate & Banana French toasties;Banana & Apple friands; Beef vindaloo with coconut & banana sambal; Banoffee trifle; Spiced banana tarte tatin…but I had to use those over ripen banana’s and the recipe to win me …

A memorable stepping stone…

One of the unfortunate things of living a long distance from home, is that my wedding day was only shared with my immediate family.Family and friends sent me warm wishes for the day, so I had everyone there in spirit. As most of my family and friends, haven’t seen these memorable moments from my wedding day… leading up to our 6th wedding anniversary I’d love to share with you this special day in my life. I had the blessing of my parents, sister , her  husband and my niece making the long trip over to spend seven weeks before the day with me.  I was so surprised when Dad said he was coming over. He’d never flown before and Australia to Europe is a long trip. But they arrived and the wedding plans went into action. My images in my mind were simple, elegant and of course no meringue dresses!   I didn’t want the confined atmosphere of a restaurant, set time limits or set menu’s. So the decision was made to have a garden wedding, not a common …

Green with Ivy

I’m surrounded by lush green vineyards in the heat of our first Spring days an unusual but pleasant image, unusual for me after many dry, sunburnt amber Summers in Australia. It’s  truly a welcomed image after the long Winter we’ve had. My life is surrounded by green.      This photo was taken this Winter, a beautiful image also of our vineyard…      Along the lush corridors around our home.  The trees are tangled with climbing evergreen ivy, even in my garden the grand old oaks trunk is covered with meandering ivy.      This image of our old oak tree was taken this Winter…      ….no fences here…a hedge of green      While walking around Treviso, I found this villa covered in ivy…        An interesting article I read from Better Homes and Gardens, May 2010,(Yes , I got my hands on an english version) was Easy Outdoor Containers. Anyone, even the least green thumb gardener can achieve beautiful containers of plants grown to their potential with the basic anatomy of the pot correct, good quality of top soil and potting mix, the right position for  light source …
